Carrot, Coconut, Curry Cookies

Oh the weather outside is frightful...We've had some wild spring weather yesterday and today.  Thunder storms, hail, sheets of rain and today, snow!  It's exciting because we know that April showers bring May flowers.   (Or so they say)

Yesterday, because it was so dark and dreary, I decided that making cookies would be a good activity.  It's also a good activity when the sun is shining.  
A few weeks ago, I went to My Dough Girl to check out their cookies!  Each cookie has a name; Penelope, Judy, Betty, Audrey, etc. They were mouthwateringly delicious!  We were given samples and one that I tried was the flavor of the month - BillieAnn.  This is a carrot, coconut, curry cookie with coconut frosting!   Curry?  I was a little reluctant to try it at first, OK, very little.  So what if it tastes like Indian food?  It looked delicious!  And it was!  This recipe is my version of the BillieAnn.  You'll want to try it but you'll also want to check out My Dough Girl and try the real thing!  Your taste buds will thank you!

Carrot, Coconut, Curry Cookies
3/4 cup butter, softened
1 cup cooked, mashed carrots
3/4 cup white sugar
2/3 cup brown sugar
2 eggs
1 teaspoon vanilla
1 tsp. salt
1/2 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. curry powder (I wasn't very brave)
3 cups flour
1/2 cup coconut

Blend softened butter and cooked carrots together.  My carrots were still warm.  Cream sugars into butter and carrots.  Add eggs and vanilla.  Add dry ingredients and mix well.  
Stir in coconut.  On a greased cookie sheet, drop dough by rounded tablespoons. Bake at 350 degrees for 12 minutes.

Frost with your favorite icing.  I didn't have powdered sugar so I made this recipe from The Pioneer Woman.  It's amazing!!  Go there to get the tutorial.  Here's the recipe.

That's the Best Frosting I've Ever Had
1 cup milk
5 Tablespoons flour
Pour milk into a sauce pan.  Add flour and stir until blended. After adding the flour, whisk it together until combined, then place the saucepan over medium heat. Whisk it as it heats up and thickens, and stop when the mixture is very thick.  
Add 1 tsp. vanilla.  Let cool completely.

Beat together until smooth and creamy:
1 cup butter
1 cup sugar
Add milk and flour mixture and mix until smooth. 
Spread on your cookies.  You could add some coconut flavoring to the frosting.
Absolutely delicious!
 

The curry adds a full bodied flavor to the cookies.  I didn't dare put too much in and I feel like the 1/4 tsp. was just enough.  But you can add more.

Sorry your weather is dreary......please don't say snow again until January of next year. I'm soooo over snow.

Anyway........curry cookies? Really? I'm not sure what would possess someone to put curry in the cookies..... your picture looks so yummy I'm going to have to try them though.

I would definitely leave the curry out. I don't do curry. But other than that, they sound delicious!

These look wonderful! That isn't much curry but probably enough and I have never heard of cooking and mashing the carrots first...I will have to make them, I so love carrot cookies! Come say hi :D

But.. the curry.. Hmmm...
I am NOT a fan of curry.. or any Indian food for that matter.. so I wonder if I made a batch.. if I could tell or not.

Could you taste the curry??

Everyone who had a cookie couldn't tell there was curry in them. They just thought there was a bit of a zing, but not too much. You could leave the curry out if you're scared but it's worth putting it in.

And may I tell you that the frosting really is divine!!

Curry in cookies? Wow! That is a new twist. I am seeing so many interesting recipes lately, things I would never in a million years have thought of on my own.

And anything that comes from Pioneer Woman is a winner so I know the frosting is good too!

Mmmmmm. Those sound delish. I'm dying here. My Dr. took me off of sugar to see if it would help my Migraines. It's only been 3 days and I am starting to crack.........

Channel 2 News featured My Dough Girl last week I think on the morning news. You know with that cooky but kind of funny morning guy. And SERIOUSLY...I thought the cookies looked so darn good. And I thought as I usually think when I see that we are missing fun bakeries with good cookies and cupcakes "WHY DON'T WE HAVE SOMETHING LIKE THIS?" NOW I CAN!!!!!! Thanks for the recipe.

I LOVE coconut and these cookies are calling to me in a 'big bad must have some' way...but I've got to get to the store to buy some curry, I've NEVER cooked with it before. Thanks...it will be fun to try something NEW!

The banana cake is gone, and so yummy that I thought about making another one... but maybe a half batch; that seems safer :)

Kyle was so surprised with the weather here as opposed to your neck of the woods--when he left in the morning it was snowing and he got here to beautiful 70+ temps.

I'm not a curry fan, but I LOVE carrot cake.

YAY!! I'm so excited to finally try out your recipe. I love that the cookies have coconut in the dough. I be they are SO yummy and your photos of your cookies are making my mouth water...I wish I could just reach through the screen and take one and eat it.
